Black Bean Brownies
Have you ever had a canning mishap that turned out to be a blessing in disguise? Well, I certainly did this week when two of my seals failed on the black beans I had just canned. While it may sound like a problem, especially for those new to canning, it actually provided me with an opportunity to experiment in the kitchen and embark on a culinary adventure.
This was my first time canning dried beans, and I wanted to ensure that the texture was just right before relying on them for future meals. So, when I discovered the failed seals, I saw it as a chance to test out the beans and get a feel for how they would perform in various dishes.
One dish immediately came to mind – Black Bean Brownies. Andy had been craving them for weeks, and what better way to put these beans to the test than by whipping up a batch of these delicious treats?
Here's the recipe I used:
Black Bean Brownies:
Ingredients:
- 1 Can Black Beans’
- OR 1 Pint Home Canned Black Beans
- 3/4 Cup Semi-Sweet Chocolate Chips
- divided - 1/2 C - 1/4 C
- 3 Tablespoons Olive Oil
- 3 Large Eggs
- 2/3 C Packed Brown Sugar
- OR 2/3 C Sugar 2 tsp Molasses
- 1/2 teaspoon Baking Powder
- 1/8 teaspoon Salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.
- Place the beans, 1/2 C chocolate chips, and oil into a food processor (here's the one I use). Process until well blended and smooth.
- Add the rest of the ingredients, except the remainder of chocolate chips. Process until smooth.
- Transfer to a parchment-lined 8 inch square baking pan.
- Top of remainder of chocolate chips
- Bake at 350 F for 30-40 minutes or until a toothpick inserted in the center comes out clean.
- Cool on a wire rack.
- Cut into squares
These black bean brownies turned out even better than expected! The beans added a rich, fudgy texture to the brownies, while also providing a boost of protein and fiber. Plus, they're a great way to sneak some extra nutrients into a sweet treat.
